Easy Cheesy Avocado Quesadilla

Holy guacamole!  This recipe has blown our minds this past week! I literally threw it together one day and we both died. Okay not really, but it is so bomb! Hubs loves quesadillas, I’d say he orders them about 50% of the time when we go out for Tex-Mex. I don’t because restaurants always put wayyyy too much cheese, and I’m just not that into cheese, sue me. One time I ordered a quesadilla and it came with JUST cheese, no meat, (apparently this is normal) but wtf, I was drowning in cheese. Anyways, we’ve been loving this recipe and I hope you do too!!!!

Last week Siete Foods was so nice, and sent me a package with all their products to try! I’m already obsessed with their tortillas, but OMG their chips! I’d heard really good things about them but OMG! They are so thin, so crispy, so amazing! Of course, my favorite is the lime flavor, but the sea salt and nacho are also bomb af! So, I used Siete Foods Almond Flour Tortillas for this recipe and highly recommend you do the same!

 

Side Note: I don’t own a quesadilla maker. I use this little grill I got at HEB. But if you wanna be authentic af, I’ve used this one in the past a would buy one for myself.

 

Easy Cheesy Avocado Quesadilla

For The Ground Beef

  • 1 tbsp Ghee
  • 1 lb Ground Beef (I use Butcher Box)
  • 1 package Mrs. Dash Taco Seasoning
  • 3/4 cup Water

For quesadilla

  • 1 package Siete Foods Almond Flour Tortillas
  • 2 tbsp Shredded Mexican Cheese
  • 2 tbsp Pico De Gallo (I buy pre-made)
  • 1/2 Avocado (diced)

Garnish

  • 1 tbsp Organic Sour Cream
  • 1/2 gaucamole
  • 1/4 cup Organic Salsa
  • 1/4 Jalapeno (sliced)
  • 2 tbsp Pico De Gallo
  • 1 tbsp Cilantro
  • 1 Lime (cut into forths)
  1. Add ghee to pan and brown the ground beef.

  2. Once beef is cooked all the way through, add the water and Mrs. Dash Taco Seasoning. Let simmer and Thicken for about 5 mins.

  3. Plug in your quesadilla maker and let heat.

  4. Place tortilla on maker and add, beef, cheese, pico, and avocado on half of the tortilla. Fold tortilla in half and close tortilla maker.

  5. Let cook for about 10 min, checking about 5 half through. Once tortilla is crispy but not burned its ready!

  6. Garnish as you wish, and enjoy!
